Ingredients

  • 1 lb. fresh sugar snap peas. approx. 4 cups trimmed and halved.
  • 1 bunch radishes trimmed and sliced thin or julienned.

Vinaigrette

  • 1 cup fresh basil firmly packed
  • ¾ cup fresh dill firmly packed
  • 3 small cloves garlic
  • 1 Tablespoon Dijon mustard
  • ¼ cup fresh lemon juice 1-2 lemons
  • ½ cup olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground pepper

Instructions

  1. Wash and trim snap peas. Remove string and ends, then cut in half.
  2. Wash and trim radishes and then thinly slice, stack and julienne.

Make Vinaigrette:

  1. Place all vinaigrette ingredients in food processor or blender and process thoroughly until smooth. Taste for seasoning, adding additional salt and pepper to your preference.
  2. Place prepared snap peas and radishes in a large mixing bowl. Pour half of the prepared dressing over the vegetables and mix well to ensure an even coating. Add more dressing as needed, according to your taste.
  3. The dressed salad will stay fresh and delicious in the refrigerator for up to 5 days, with flavors intensifying over time.
  4. Any extra dressing can be stored separately in the fridge in a covered container for up to a week, ready to elevate other salads or dishes.
