  • Use a microplane zester to finely grate the garlic cloves and the lime zest directly over the bowl. Sprinkle in the sea salt and crushed red pepper.
  • Juice the zested lime into the bowl, then add the red wine vinegar and extra virgin olive oil. Stir all ingredients thoroughly until well combined. Taste and adjust seasoning as desired.

  • Place peeled garlic cloves and roughly chopped shallot into the bowl of a food processor and pulse a few times until finely minced.
