Ingredients

  • 3 lbs rainbow carrots
  • 1 bulb fennel
  • 2 Tablespoons avocado oil
  • 1 teaspoon cumin
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • ½ teaspoon turmeric
  • 5 oz. organic baby arugula or other green

Dressing

  • 2 Tablespoons olive oil
  • 1 Tablespoon balsamic vinegar
  • 1 Tablespoon lemon juice
  • 1 Tablespoon maple syrup
  • 1 teaspoon Dijon mustard
  • 1 clove garlic grated

Instructions

  1. Preheat oven to 425°F (220°C). Line a rimmed baking sheet with unbleached parchment paper.
  2. Scrub carrots clean (peeling is optional, especially for rainbow carrots for visual appeal) and cut into 2-inch pieces on the diagonal. Trim the fennel bulb, reserving any fronds for garnish, and thinly slice it.
  3. Place the prepared carrots and fennel on the baking sheet. Drizzle with avocado oil and toss thoroughly with cumin, sea salt, black pepper, and turmeric, ensuring all vegetables are evenly coated.
  4. Roast for 30 minutes, or until the vegetables are tender-crisp, soft, and just beginning to caramelize, developing a rich, sweet flavor.
  5. While the vegetables are roasting, prepare the dressing. In a small bowl, whisk together the olive oil, balsamic vinegar, lemon juice, maple syrup, Dijon mustard, and grated garlic until well combined and emulsified. Once the carrots and fennel come out of the oven, transfer them to a large mixing bowl and toss immediately with about half of the prepared dressing. Set aside to cool slightly.
  6. Once the roasted carrots and fennel have cooled to a warm or room temperature, add the organic baby arugula (or your preferred green) to the bowl. Drizzle with the remaining dressing and gently toss until the greens are lightly coated. Serve immediately at room temperature. Garnish with reserved fennel fronds if desired for an extra touch of elegance.

MAKE AHEAD: You can prepare the roasted carrots and fennel in advance. After roasting, toss them with the dressing and refrigerate until ready to serve. When you’re ready, either bring the mixture to room temperature naturally or gently warm it in a 300°F (150°C) oven for about 10 minutes. Add the fresh arugula just before serving to maintain its crisp texture.
