Adventures in Temporary Kitchens and a Commitment to Health

While I’d love to share more captivating photos of our kitchen renovation progress, we’re still deeply immersed in the dusty phases of demolition and infrastructure work. Ingredients

  • 2 Tablespoons Olive Oil
  • 1 shallot finely chopped
  • 2 cups grape tomatoes halved
  • ½ teaspoon sea salt
  • Pinch crushed red pepper
  • ½ teaspoon sweet paprika
  • 2 cloves garlic minced
  • 1 15-oz can cannelini beans rinsed and drained
  • 1 bunch lacinato kale any sturdy green will work (curly kale, purple kale, collard greens, spinach, swiss chard, etc.), stems removed and chopped

Instructions

  1. In a heavy skillet over medium heat, swirl in olive oil and sauté the finely chopped shallots for 3 minutes until softened. Then, add the halved grape tomatoes, sea salt, crushed red pepper, and sweet paprika. Toss gently to combine and cook for an additional 2 minutes, allowing the flavors to meld.
  2. Press the minced garlic into the pan with the tomatoes and shallots, then add the rinsed and drained cannellini beans. Continue cooking, stirring occasionally, until the tomatoes begin to blister and release their delicious juices, creating a rich sauce.
  3. Turn off the heat. Add the chopped kale (or your chosen sturdy greens) to the pan. Toss vigorously with the warm bean and tomato mixture until the greens wilt down, absorbing all the wonderful flavors. The residual heat from the pan will perfectly cook the greens without overdoing them.
  4. Serve warm directly from the pan, or at room temperature. This dish is incredibly versatile and makes a fantastic standalone meal or a robust side.
