Instructions

  1. Place pickle juice, water, maple syrup, mustard, onion powder, garlic powder, paprika, salt, pepper, and tofu into a tall container. Blend with an immersion blender until completely creamy and uniform in texture.
  2. Alternatively, place all ingredients (except chopped pickles) into a high-speed blender or food processor and blend until creamy and uniform in texture.
  3. If needed, add additional water 1 tablespoon at a time until desired consistency is reached.
  4. Finely chop pickles into small dice.
  5. Stir the finely chopped pickles into the blended sauce by hand until well incorporated.
  6. Taste and adjust seasonings as desired (more maple syrup for sweetness, more pickle juice for tang, etc.).
  7. Store in an airtight container in the refrigerator for up to 2 weeks.
