  2. Place dates, tahini, and vanilla in a food processor. Blend until it forms a smooth paste.
  3. Add uncooked quinoa, cacao powder, flax meal, cinnamon, and salt. Process until all ingredients are well incorporated.
  4. Add the nuts, seeds, and cacao nibs. Pulse until the nuts are chopped and the mixture is crumbly but cohesive.
  5. Pour the mixture into the prepared pan. Use your hands or an offset spatula to press down firmly, ensuring a flat, even surface on top.
  6. Place in the freezer to firm up for at least one hour. If desired, melt ¼ cup dark chocolate and drizzle over the top. Return to the freezer for another 15 minutes, or until the chocolate hardens.
  7. Gently remove the parchment paper with the bar mixture onto a cutting board and cut into squares or bars.
  8. Store in the fridge for up to a week, or in the freezer for up to 3 months.

Notes

*I always buy dates with the pits in because they tend to be fresher and moist enough that they don’t require soaking. If your dates are already pitted and feel dry, you may need to soften them. Soak them in warm water for at least 30 minutes, then drain thoroughly before proceeding with the recipe. If you prefer a sweeter bar, consider adding 2-3 additional dates.
