The Heart of Healthy Pizza: Our Nutrient-Rich Vegan Ricotta

The secret to these incredibly flavorful and healthy vegan ricotta pizza muffins lies in their star ingredient: the homemade vegan ricotta. Unlike traditional dairy ricotta, this plant-based version is crafted from a foundation of wholesome ingredients, ensuring every dollop adds both exquisite flavor and a powerful nutritional boost. Forget highly processed alternatives; our recipe leverages the natural goodness of vegetables and nuts to create a creamy, satisfying texture that rivals its dairy counterpart.

The Power of Cauliflower in Vegan Ricotta

At the core of our luscious vegan ricotta is cauliflower, a cruciferous vegetable renowned for its impressive nutritional profile. Often overshadowed by its more vibrant cousins, cauliflower is a true unsung hero in the plant-based kitchen. It’s an excellent source of essential vitamins and minerals, boasting high levels of Vitamin C, a powerful antioxidant crucial for immune function and skin health. Just half a head of cauliflower can contribute significantly to your daily vitamin C intake, making it one of the top 10 sources of this vital nutrient.

Beyond its vitamin content, cauliflower is packed with dietary fiber, which is essential for healthy digestion, promoting regularity, and supporting a balanced gut microbiome. It also contains unique compounds like sulforaphane, known for its anti-inflammatory properties and its potential role in detoxification pathways within the body. Emerging research suggests that regular consumption of cauliflower may be associated with a decreased risk of certain cancers, including colon and lung cancers, as well as providing benefits for cardiovascular health. Incorporating this versatile vegetable into your diet through our vegan ricotta is a delicious way to harness its myriad health advantages, from fighting inflammation to balancing hormones and boosting overall vitality.

The Nutritional Boost of Pine Nuts

As if the benefits of cauliflower weren’t enough, our vegan ricotta takes its nutritional game to the next level with the addition of pine nuts. These small but mighty nuts are a powerhouse of essential nutrients, contributing to the ricotta’s creamy texture and boosting its health profile even further. Pine nuts are an excellent source of healthy fats, primarily monounsaturated fats, which are known to support heart health by helping to lower bad cholesterol levels.

They are also rich in protein, making them a valuable addition to any plant-based diet for muscle repair and satiety. Furthermore, pine nuts provide a wealth of essential minerals, including iron and magnesium. Iron is crucial for energy production and preventing fatigue, while magnesium plays a vital role in over 300 bodily functions, including nerve and muscle function, blood glucose control, and blood pressure regulation. The antioxidants found in pine nuts help combat oxidative stress and protect cells from damage. Moreover, their nutrient composition, including lutein and zeaxanthin, is beneficial for maintaining excellent vision health. By incorporating pine nuts, our vegan ricotta not only becomes incredibly delicious but also a profoundly nourishing component of these amazing pizza muffins.

Elevating Flavor and Nutrition with Smart Pizza Toppings

One of the most exciting aspects of making your own pizza, especially these individual muffins, is the endless opportunity to customize and load up on nutritious toppings. The mantra here is simple: the more veggies, the better! This is where you can truly unleash your creativity and pack each mini pizza with flavors and nutrients that suit your preference.

Since these mini pizza muffins cook up relatively quickly, usually in about 15 minutes, it’s a good idea to pre-cook any harder vegetables that require more time to tenderize. My go-to method for preparing pizza toppings is simple roasting. I chop my chosen vegetables – broccoli, Brussels sprouts, asparagus, colorful bell peppers, mushrooms, and onions are always fantastic choices – drizzle them with a good quality olive oil or avocado oil (which has a higher smoking point and neutral flavor), and season them with sea salt and freshly ground black pepper. Roasting them in a hot oven (around 425°F or 220°C) for 10-15 minutes makes them perfectly tender-crisp. Remember to undercook them slightly, as they’ll continue to cook a bit more when baked on top of your pizza muffins.

Beyond roasted vegetables, consider adding marinated artichoke hearts for a tangy bite, or sliced olives for a briny touch. Sun-dried tomatoes (either oil-packed or rehydrated) offer a concentrated burst of umami. For an extra layer of flavor and protein, you could add some crumbled plant-based sausage or seasoned chickpeas. Don’t be afraid to mix and match; the beauty of these muffins is that each one can be a unique culinary creation! With a simple homemade dough, our incredible vegan ricotta, and a colorful array of nutrient-packed roasted veggies, you’re truly running out of excuses not to make and savor these delightful mini pizza muffins. Stop limiting yourself to labels that don’t serve your health and happiness well!

Equipment

  • Ebuns French Rolling Pin for Baking Pizza Dough, Pie & Cookie – Essential Kitchen utensil tools gift ideas for bakers (French Pins 18″ inches)

Ingredients

Pizza Dough

  • 1 cup hot water
  • 1 packet 2 ¼ teaspoons dry yeast
  • 1 Tablespoon honey
  • 1 Tablespoon olive oil
  • 1 ¾ cup whole wheat flour
  • 1 cup unbleached white flour
  • ½ teaspoon salt

Vegan Ricotta

  • 2 cups Cauliflower florets about ½ head
  • 1 cup pine nuts
  • 1 small clove garlic finely grated
  • 1 Tablespoon lemon juice
  • 2 Tablespoons olive oil
  • 1 teaspoon dried Italian spices
  • ½ teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • ¼ cup water
  • 1 Tablespoon nutritional yeast optional

Pizza

  • 1-2 Tablespoons avocado oil
  • 1-2 Tablespoon corn meal
  • Tomato Sauce I used canned organic crushed tomatoes
  • Toppings: roasted veggies** broccoli, brussels sprouts, asparagus, red peppers, mushrooms, onions, etc., artichoke hearts, olives.

Instructions

  • Preheat oven to 425°F (220°C). Lightly oil muffin tins with avocado oil.
  • Make the dough: In a glass cup, combine hot water, yeast, honey, and olive oil. Let it sit for 5 minutes to proof the yeast. In a mixer or food processor, combine the flour and salt. Add the liquid ingredients to the dry ingredients. Mix on high speed for about 3 minutes until a dough forms. If mixing by hand, knead the dough until it is smooth and no longer sticky (this may take up to 5 minutes). Place the dough in a bowl and cover it with a kitchen towel to rise for a minimum of 15 minutes.
  • Make the ricotta: Cut cauliflower into florets and steam for about 13 minutes, until tender but not mushy when pierced with a fork. Place the steamed cauliflower and pine nuts into the bowl of a food processor and pulse until combined. Add the remaining ricotta ingredients (garlic, lemon juice, olive oil, Italian spices, sea salt, black pepper, water, and optional nutritional yeast) and process until creamy, but retain some texture – it shouldn’t be totally smooth. Taste for seasoning, adding more salt and pepper as needed.
  • Assemble the pizzas: Sprinkle cornmeal on a clean, flat surface. Roll out the pizza dough to â…›-inch thickness. Use a circular cookie cutter or the rim of a glass (approximately 3 inches in diameter) to cut out dough circles. Place one dough circle into each prepared muffin tin, gently patting it down and outward to form a cup shape. Spoon a tablespoon of tomato sauce into each dough cup, followed by a dollop of the vegan ricotta, and finally, your desired veggie toppings**. Bake for 15 minutes, or until the crust is golden brown and crispy.
  • Storage Tip for Ricotta: The homemade vegan ricotta will stay fresh in an airtight container in the refrigerator for up to one week.
  • Storage Tip for Muffins: Store baked pizza muffins in the refrigerator for up to 5 days. Reheat them in a 375°F (190°C) oven for 10-15 minutes until warmed through and crispy.
  • Freezing Tip: Already cooked pizza muffins can be frozen for up to 3 months. Thaw overnight in the fridge and reheat as directed above.

Notes

**TOPPINGS: Get creative with your toppings! Here are a few suggestions to inspire you: broccoli, Brussels sprouts, asparagus, red peppers, mushrooms, onions, artichoke hearts, olives, sun-dried tomatoes, spinach, or kale. Feel free to mix and match your favorites! Let me know in the comments what you put on YOURS!

For roasted veggies on your pizza: Preheat oven to 425°F (220°C). Chop your desired vegetables, drizzle them with olive oil, and season with salt and pepper. Roast for about 10-15 minutes. It’s best to undercook them slightly because they will continue to cook a bit more when the pizza muffins bake in the oven. This ensures they remain tender-crisp and flavorful.
