  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon , or more for extra warmth
  • ½ teaspoon sea salt
  • ¼ cup dark chocolate chips* (optional, but highly recommended)
  • ¼ cup dried cherries (chopped into small pieces for easier slicing)

Instructions

 

  • Preheat Oven: Preheat your oven to 375°F (190°C).
  • Toast Almonds (if raw):

    • STOVETOP METHOD: Heat a dry skillet over medium heat. Add raw almonds and toast for 2-3 minutes, shaking the pan frequently, until lightly browned and fragrant.
    • OVEN METHOD: Place raw almonds directly on a heavy baking tray. Roast in the preheated 375°F (190°C) oven for 8 minutes, shaking the pan halfway through. Watch carefully to prevent burning. Remove and let cool slightly.
  • Adjust Oven Temperature: Reduce oven temperature to 350°F (175°C). (If you toasted almonds on the stovetop, you can start with the oven at 350°F now.)
  • Prepare the Dough: In the bowl of a food processor, combine the toasted almonds, pitted dates, tahini, water, arrowroot powder, vanilla extract, baking powder, cinnamon, and sea salt. Process until the mixture becomes crumbly (about 30 seconds). Scrape down the sides of the bowl. Continue processing until the mixture comes together to form a cohesive ball of dough. Remove the blade, then gently stir in the dark chocolate chips and chopped dried cherries by hand until evenly distributed.
  • First Bake – Form and Bake Loaf: Line the same baking sheet (or a new one) with unbleached parchment paper or a silicone baking mat. Transfer the dough to the lined baking sheet and shape it into a tight log, approximately 10-12 inches long and 2-3 inches wide. Bake in the 350°F (175°C) oven for 15 minutes.
  • Reduce Oven Temperature Again: While the loaf is baking, lower the oven temperature to 300°F (150°C).
  • Cool and Slice: Once the first bake is complete, remove the biscotti loaf from the oven. Let it cool on the baking sheet until it’s comfortable to handle (the chocolate should no longer be drippy, if used). However, if you’re aiming for perfectly uniform, smooth slices without any breaks or holes, consider chopping the cherries into very small pieces or even omitting them. Larger pieces of dried fruit can sometimes make clean slicing a bit challenging.
